Preparation Method

4

1. Preparing the Marinade

5

In a deep bowl, combine the soy sauce, rice vinegar, and sesame oil.

6

Add half of the minced ginger, garlic, white onion, and chili peppers into this liquid mix. Mix well. (Save the other half of these aromatics for the sauce later).

7

2. Marinating & Grilling "Al-Khair" Chicken Shish

8

Take Al-Khair chicken shish chunks and toss them in a portion of the prepared marinade. Let it sit in the fridge for at least 30 minutes to absorb the flavors.

9

Thread the marinated chicken pieces onto grilling skewers (shish).

10

Preheat your grill. Place the chicken skewers on the grill, and crucially, keep brushing the chicken with the remaining marinade throughout the entire grilling process until it is fully cooked and beautifully caramelized.

11

3. Grilling the Vegetables

12

Grill the vegetables (baby zucchini, pearl onions, tomatoes, carrots, and baby corn) alongside the chicken or in a separate grill pan until they are tender and have nice char marks.

13

4. Making the Glaze (Thick Sauce)

14

In a small saucepan, pour the remaining marinade liquid and add the reserved half of the ginger, garlic, and onions. Bring to a gentle simmer.

15

Pour the dissolved cornstarch slurry (cornstarch + water) slowly into the simmering sauce while stirring continuously. Let it bubble for a minute until the sauce thickens into a glossy glaze.

16

5. Plating & Serving

17

Arrange your beautifully grilled Al-Khair chicken skewers and the colorful grilled vegetables on a serving platter.

18

Drizzle the thick, warm savory glaze over the chicken, or serve it on the side as a dipping sauce.

19

Garnish generously with chopped fresh coriander and extra minced chili peppers if you like it spicy.
