Stuff the Chicken: Stuff the butter and cheese mixture generously inside the chicken pockets. Pull the skin over the opening and secure it tightly using toothpicks so the filling doesn't leak out.
Marinate: In a small bowl, whisk together the vegetable oil, sweet and smoked paprika, garlic powder, onion powder, salt, and black pepper. Brush this marinade generously all over the outside of the chicken drumsticks.
Bake: Arrange the stuffed drumsticks on a baking tray. Roast in a preheated oven at 200°C for about 35 to 45 minutes, or until the chicken is fully cooked and the skin is golden and crispy.
Prepare the Sauce & Glaze: While the chicken is baking, combine the ketchup, Sriracha, vinegar, honey, and 50g of butter in a small saucepan over low heat. Stir until the butter melts and the sauce becomes smooth and glossy.
Final Touch: During the last 5 minutes of baking, brush the chicken drumsticks with a generous amount of the prepared sauce to caramelize. Serve the remaining sauce on the side for dipping
