Submerge the chicken pieces in the mixture, cover, and refrigerate for at least 2 hours (overnight is preferred).
Step 2: Coating for Extra Crunch
In a large shallow bowl, mix the flour, cornstarch, and the coating seasonings.
take a piece of chicken straight from the buttermilk marinade, dread it thoroughly in the flour mixture, and press firmly with your fingers so it gets fully coated.
For an extra-crispy crust (Optional): Dip the floured chicken back into the buttermilk for a split second, then dredge it in the flour a second time. Shake off the excess gently to create those beautiful, flaky ridges.
Step 3: Frying
Heat generous amount of oil in a deep frying pan over medium heat (around 170°C - 180°C).
Fry the chicken pieces (do not overcrowd the pan so the oil temperature doesn't drop).
Fry for 6 to 8 minutes (flipping halfway through) until they turn deeply golden brown and crispy.
Remove the chicken and let it drain on a wire cooling rack, not on paper towels (to prevent it from getting soggy).
Step 4: Assembling the Burger
Toast the burger buns with a little bit of butter on a skillet until golden.
Spread the sauce on the bottom bun, then layer the shredded lettuce and pickles.
Place the hot, crispy Al-Khair chicken thigh on top, and immediately place a slice of cheddar cheese over it so it melts from the heat.
Top with the upper bun and serve immediately with a side of French fries.
